Apple Cake

This time of year always brings me back in time. 

A time growing up in the north with all the beautiful trees turning colors. Hometown football games and family get togethers. We use to go to the pumpkin patch where they made cinnamon donuts and pressed harvested apples for homemade apple cider. The smell of apples and cinnamon in the air was to die for. Funny how smells are so relevant to memories. 
I also remember going on one of my dad's famous mystery rides to a farm one year where we purchased bushels of McIntosh apples. My mom baked apple pies, apple fritters, apple crumb, baked apples and whatever else she could come up with. We never got sick of them.

So the first cool day of the year, I wanted to do something with apples. Bring back those wonderful aromas and memories. Apple cake sounded perfect.


I love this made from scratch cake. I used McIntosh Apples of course!
This apple cake will be great all season. I have attached the recipe for you to try. 
Warning: this is a very rich cake but you will love it.

The apples give it a sweet tart flavor. You can use any baking apple you wish for this recipe.


This comes with a cream cheese icing recipe too. 

Apple Cake

2c sugar
1c butter
2 eggs
2c flour
1t soda
1t salt
1t nutmeg
2t cinnamon
5c apples diced

Combine wet ingredients till mixed well and add the dry. Bake in a 9x13 greased baking dish for 40 min or until done. 350 degrees

When cooled top with cream cheese icing.


Cream Cheese Icing

2T lemon juice
6oz cream cheese
6oz butter melted
2c powdered sugar

Ice cake when cooled and enjoy!

This dessert encompasses everything fall to me. If you get tired of apple pie this is a good alternative. I hope you give it a try.
